NOOOOOOO YOU DO NOT EVER MELT THE BUTTER! Welcome chip shirt. I was a professional Baker & trust me when I say that softened butter is HANDS DOWN the way to go! When you melt the butter you bake it right out of the cookie, you end up with flat, greasy cookies, when you soften the butter the butter bakes WITH the cookie, you will get height & chewy delicious cookies! Actually no you don’t… I’ve made 1000 recipes of softened butter cookies and they are the ones that flatten and are greasy these are puffy and chewy brown on the edges and are really perfect and I think the Browns melted butter and the way that this is constructed is good the only thing I would say is that cooks illustrated came up with this technique and recipe a long time ago I would check out their recipe which I think is a bit better less salt no espresso powder and use butter instead of water to at the volume back.

I also refrigerate my sugar cookie dough I started doing it to solve the greasiness problem & it really does make a difference. I was a professional baker at one point in my life I experimented with all different ways of baking & recipes my sugar cookies blow everyone else right out of the water, it is one I perfected over the years the other thing I do differently is I use vanilla & almond in the dough & sometimes if I want more nutty cookies I use crushed nuts as part of the flour. Also, it’s not just melting the butter but browning the butter mixing it with the sugar and whisking it letting it sit repeatedly to her three times you have to do the method in the recipe anyway I do cool them too soon that we agree.

Would appreciate if you messaged me some nice recipes because I try some of these Pinterest recipes and they’re mostly terrible. Would really appreciate it. I’m just a lie Carribean girl wanting to bake some good stuff. She just showed you how it comes out with the melted butter in that state. It works. At the end of the day, t really is a matter of taste. Some people like the fluffier effect you get from using the softened as opposed to melted, I however, prefer my cookie like the one in this video, flatter more condensed, less cake like to me. You shouldn’t melt it but the idea of it “baking out of the cookie” is nonsense cause it melts in the oven either way.
Elise Tipton, I do put it in the fridge for a few minutes but usually, by the time it’s together is cookie dough it really is it melted it’s not like soupy it’s more like the consistency of fudge..Welcome chip shirt. My chewy chocolate chip cookies use fully melted butter (melted and cooled to room temp) as its sort of “secret”. Allows for better bonding to the flour before baking instead of allowing it to bond during.
