Reduce wine by half then add the heavy cream. Reduce cream until it coats the back of a metal spoon. That’ll tell you if the sauce is getting thick. Slowly add the cheese and whisk until it is as thick as you like it. Add spinach and mix. Taste. Add salt and pepper if needed…finished!!It’s still their recipe except it corrected all of the issues. Okay, so I made this last night. The secret is high heat for 1/2 n 1/2 and does not add the cheese when you cook it. Add it at the end slowly and stir.
